Modern brewing
The historically formed beer brewing process, which came down to us from the Sumerians and the Germans, has preserved all the stages of brewing. Advanced equipment, all automatic control of the process allow not only to brew old traditional beers, but also to create new ones.
Beer production process consists of several stages
1. Preparation of malt – germination of grains of used cereals, drying, purification from parosticki. Dried grain is unable to yield proteins, the zucor in it is in the form of starch. So, in order to “awaken” the grain, it is sprouted. Barley grains are most often used for beer production.
2. Malt mashing. To produce a particular type of beer, a certain mash recipe is used – a mixture of different types of malt and other necessary ingredients. Dissolve the malt with water (mash it) in a boiler and heat it to the required temperature.

3. at the stage of filtration the mash is pumped into the filter tank, where the unripened pellets and wort are separated. Beer pellets are considered to be a waste product of the brewing process and are a sum of kernel particles and shells of grains. Beer pellets are used to feed animals or for the production of biogas.
4. Wort boiling. Then add hops and other ingredients to the unhopped wort, and cook in the wort boiler for 1-2 years. Thanks to the hops, the beer acquires a characteristic brightness, flavor and a strong stubble. Ukrainian brewers mainly use domestic hops, but also import Bavarian (Germany), Czech (Czechia), English and American hops.

5. Wort clarification and cooling. The ready wort is pumped into the whirlpool, where the bilk and non-dewy residues of grains and hops are separated. Afterwards, the wort is cooled in a special plate cooler and pumped into tanks for fermentation.
6. Brodding starts in cylindro-conical vertical tanks. During the fermentation process, alcohol and carbon dioxide gas are produced as a result of the interaction between the sucrose in the Sulphur and the yeast added to the wort. The carbon dioxide gas sours the wort, and then its surplus is collected and discharged through a special pipe. Hour of vagrancy, its temperature depend on:
- for brewing beer;
- and the type of beer they want to get – top or bottom noise.

In order for fermentation to proceed properly, it is necessary to constantly maintain the temperature of the wort, so the tank is cooled. For the production of top-fermenting beer, the temperature of 15-20°C is maintained, for bottom-fermenting beer – 6-9°C. The absence of froth on the surface of the wort is an indicator of the end of the fermentation process. At the bottom of the tank for fermentation collect all the dressed sediments and layers of protein spores, after the end of fermentation they are removed. As a result of fermentation we get young “green” beer, which is cooled down and then matured at 0-1°C.
7. Filtration of beer from the residue of drilled liquid. Industrial breweries for beer filtration use Kieselguhr filters, separators, filter presses, fine filters.
Clarified (filtered) beer is collected in forfas – special containers for storage before bottling.

8. Pasteurization of beer – to increase the shelf life of beer, some types of beer are heated to a temperature of 68-72 °C. At some breweries beer is pasteurized already in the beakers, at others – before bottling. It is believed that heating beer (pasteurization) impairs its flavor.
9. Dispensing is carried out on special fast dispensers (machines). The cleanliness of the packaging and the speed of removing the air from the beads determine the storage time of beer. Some breweries have their own workshop for the production of glass or PET beer flats. The beer bottles are hermetically sealed and a special labeling machine puts a label on them.

Marketers and designers believe that brand building starts not from the quality of beer, but from its packaging.
