Therefore, when analyzing it, markets for individual products should be distinguished. In the article below, we look at the meat market in general, sausages and deli meats. This division is dictated by prices: the first is the low and medium budget segment, the second and third are more often premium.<\/p>\n\n<p class=\"wp-block-paragraph\">The first peculiarity of the Ukrainian market: all these goods are characterized by high competition. The second peculiarity is that Ukrainian producers are leading. Consumers buy cooked sausages, sausages and wieners the most, accounting for more than half of all sales. In addition, chicken captured more than 80% of Ukraine&#8217;s meat market in 2017, while pork and beef production fell. Consumers are buying more poultry and less pork and beef.<\/p>\n\n<p class=\"wp-block-paragraph\"><strong>Read also: <\/strong><a href=\"https:\/\/koloro.ua\/blog\/issledovaniya\/Analiz-miasnogo-i-kolbasnogo-rinka-Ukrainu.html\" target=\"_blank\" rel=\"noreferrer noopener\">\n  <strong>&#8220;Analysis of the meat and sausage market in Ukraine for 2016-2017&#8221;<\/strong>\n<\/a><\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aa907aee9b.jpg\" alt=\"Ukrainian meat and sausage market\" title=\"Ukrainian meat and sausage market\"\/><\/figure>\n\n<p class=\"wp-block-paragraph\">The production of meat and meat products (pork, cattle, etc.) generally follows a &#8220;sine wave&#8221;: one year production increases, the next year it decreases. But if you compare 2017 to 2011, it is noticeable that the overall trend is a drop in output.<\/p>\n\n<p class=\"wp-block-paragraph\">Nevertheless, exports (at the expense of poultry) are increasing as production declines. Imports are also increasing thanks to the same poultry, and faster than exports, which is understandable: demand remains the same and even increases, while our own production decreases.<\/p>\n\n<p class=\"wp-block-paragraph\">If you trace the production of different types of sausages from 2011 to 2017, the trend is the same. In 2017, there was a positive turnaround, with slightly more sausages produced compared to the previous year. But whether the situation actually changes can only be seen in late 2018 and 2019.<\/p>\n\n<p class=\"wp-block-paragraph\">Prices have been rising steadily since 2011. The most expensive product is sausages and the cheapest is poultry. Costs jumped most sharply in 2015 and 2017. It should be noted that the growth is also by month &#8211; &#8220;biting&#8221; prices are set from September to December.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aa928512c3.jpg\" alt=\"Production of meat and meat products\" title=\"Production of meat and meat products\"\/><\/figure>\n\n<h2 class=\"wp-block-heading\" id=\"h-&#x430;&#x43D;&#x430;&#x43B;&#x438;&#x437;-&#x440;&#x44B;&#x43D;&#x43A;&#x430;-&#x43C;&#x44F;&#x441;&#x430;-&#x438;-&#x43C;&#x44F;&#x441;&#x43D;&#x44B;&#x445;-&#x438;&#x437;&#x434;&#x435;&#x43B;&#x438;&#x439;\"><strong>Meat market analysis <\/strong><strong>and meat products<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">The trend of sharp price increases is not only month-to-month, but also year-to-year. The price ratio remains the same: the minimum is paid for poultry and the maximum for sausages.<\/p>\n\n<p class=\"wp-block-paragraph\">In 2017, the average price of poultry was 37 UAH per kilogram. Compared to 2011, its value has increased by 97%. Compared to 2016, it&#8217;s up 21%.<\/p>\n\n<p class=\"wp-block-paragraph\">Prices for cattle (cattle) meat, pork and sausages with wieners go almost in line, and in 2017 reached almost the same figure &#8211; 57-58 UAH per kilogram. Compared to 2011, the increase is over 100% and compared to 2016, the increase is 30%.<\/p>\n\n<p class=\"wp-block-paragraph\">The most expensive products are semi-smoked and smoked sausages. The average price in 2017 was 86 UAH per kilogram. That&#8217;s up 102% over the value in 2011, and up 27% over the price in 2016.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aa943c9da4.jpg\" alt=\"Analysis of the meat and meat products market\" title=\"Analysis of the meat and meat products market\"\/><\/figure>\n\n<p class=\"wp-block-paragraph\">Meat prices are rising for the following reasons:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>herd reduction;<\/li>\n\n\n\n<li>increasing demand;<\/li>\n\n\n\n<li>deduction of production in the east of the country and in Crimea.<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\" id=\"h-&#x43E;&#x431;&#x44A;&#x435;&#x43C;&#x44B;-&#x43F;&#x440;&#x43E;&#x438;&#x437;&#x432;&#x43E;&#x434;&#x441;&#x442;&#x432;&#x430;\">Production volumes<\/h3>\n\n<p class=\"wp-block-paragraph\">Production from 2011 through 2017 moved on a smooth curve and generally went into decline. The most cattle meat was produced in 2014, and volumes have been steadily declining since then. The same is the case with pork and offal. In 2017, producers produced 1,344.8 thousand tons of meat of all varieties.<\/p>\n\n<p class=\"wp-block-paragraph\">The bird changes along a sharper amplitude: volumes rise and fall. Compared to 2016, chicken production decreased by 12%, reaching a value of 878.7 thousand tons.<\/p>\n\n<p class=\"wp-block-paragraph\">The volume of poultry output and sales is 2 times the total volume of all other varieties. This ratio is maintained over the entire period from 2011 to 2017.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aa95cace2b.jpg\" alt=\"Production volumes\" title=\"Production volumes\"\/><\/figure>\n\n<p class=\"wp-block-paragraph\">The leadership of regions should be determined separately by types of meat: cattle, pork and chicken. Note that the table below summarizes the production of fresh and chilled meat in the form of carcasses. This does not include other foods such as pickled or cured items. Therefore, the countrywide totals in the table below differ from the numbers in the graph above.<\/p>\n\n<p class=\"wp-block-paragraph\">In 2017, the leaders were:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>cattle meat production &#8211; Vinnitsa oblast (11,852 tons);<\/li>\n\n\n\n<li>pork production &#8211; Donetsk (43,619 tons) and Poltava (43,146 tons);<\/li>\n\n\n\n<li>chicken production &#8211; Kyiv Oblast (91,583 tons).<\/li>\n<\/ul>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aa977b4e08.png\" alt=\"Regional leadership\" title=\"Regional leadership\"\/><\/figure>\n\n<h3 class=\"wp-block-heading\" id=\"h-&#x44D;&#x43A;&#x441;&#x43F;&#x43E;&#x440;&#x442;-&#x438;-&#x438;&#x43C;&#x43F;&#x43E;&#x440;&#x442;-&#x43C;&#x44F;&#x441;&#x430;\">Meat exports and imports<\/h3>\n\n<p class=\"wp-block-paragraph\">Despite the decline in production, exports continue to increase. Ukraine produces the most chicken &#8211; and it also accounts for the lion&#8217;s share of exports, as much as 83%. In 2017, the country exported 271,327 tons of chicken. This is up 12% from 2016 and 68% higher than 2015.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aa9917d708.jpg\" alt=\"Meat exports and imports\" title=\"Meat exports and imports\"\/><\/figure>\n\n<p class=\"wp-block-paragraph\">Pork exports recovered slightly in 2017: they are 55% higher than the 2016 figure. Still, it&#8217;s down a lot compared to 2015. The figures were affected by the African plague epidemic that hit pigs in 2016.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aa9a974d4b.jpg\" alt=\"Meat exports and imports\" title=\"Meat exports and imports\"\/><\/figure>\n\n<p class=\"wp-block-paragraph\">Exports of cattle meat are also growing, albeit at a slower pace than chicken exports. In 2017, Ukraine sold 41,875 tons of cattle meat abroad, with the volume of sales of frozen product being more than 2 times higher than the volume of fresh (chilled). Cattle exports were 32,065 tons in 2015 and 35,084 tons in 2016. Sequential export growth was 9% and 19%, respectively.<\/p>\n\n<p class=\"wp-block-paragraph\">Imports in 2017 grew even more dramatically when it comes to chicken. It was up 42% from 2016 and 93% from 2015. Among the reasons is the blockade in eastern Ukraine, which cut off the necessary production capacity. However, this blockade has not affected other types of meat &#8211; such as cattle and offal. Its imports declined by 18%, while imports of the second name increased by just 1%.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aa9c6bcc03.jpg\" alt=\"Imports 2015-2017\" title=\"Imports 2015-2017\"\/><\/figure>\n\n<p class=\"wp-block-paragraph\">Poultry (chicken) accounts for the largest share in imports &#8211; 66%. The share of other products is much lower. The reason for this predominance of poultry can be attributed to high consumer demand:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>Is the cheapest and most affordable product compared to other products;<\/li>\n\n\n\n<li>Chicken is low in calories and yet quite nutritious.<\/li>\n<\/ul>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aa9e0801aa.jpg\" alt=\"Import 2017\" title=\"Import 2017\"\/><\/figure>\n\n<h3 class=\"wp-block-heading\" id=\"h-&#x43F;&#x43E;&#x440;&#x442;&#x440;&#x435;&#x442;-&#x43F;&#x43E;&#x442;&#x440;&#x435;&#x431;&#x438;&#x442;&#x435;&#x43B;&#x44F;\">Consumer portrait<\/h3>\n\n<p class=\"wp-block-paragraph\">The meat market is oriented towards mass consumers, so it is difficult to carve out a specific audience portrait. We can say that bachelors are more likely to buy sausages and semi-finished products, while women buy raw (chilled) meat for cooking at home. Although, convenience foods are in high esteem among women as well, as these foods take less time to cook. Semi-finished products are also valued by students and retirees. People with low income rarely take sausages as it is too expensive for them.<\/p>\n\n<p class=\"wp-block-paragraph\">Meat is selected based on criteria:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>flavor;<\/li>\n\n\n\n<li>price;<\/li>\n\n\n\n<li>a familiar brand;<\/li>\n\n\n\n<li>recommendations from friends.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">More often they buy medium-priced products: cooked, cooked-smoked, raw-smoked sausages, sausages and wieners. Why does the meat leader contain the word &#8220;bread&#8221; in its name? This is a historically established name: in 1998, the business began with the purchase of shares in the Mironovsky plant of cereals and mixed fodder. Where there is mixed fodder, there are also animals: in 1999 MHP bought the Peremoga poultry farm and started to produce chicken on an industrial scale. Logic is an irrelevant thing in this case.<\/p>\n\n<p class=\"wp-block-paragraph\">In 2016, MHP held 40% of the poultry market. Plus it ranked first among chicken exporters &#8211; about a quarter of the chicken produced is sold abroad. In the same year, the company opened distribution offices in the Middle East and North Africa, as well as a processing plant in the Netherlands.<\/p>\n\n<p class=\"wp-block-paragraph\">Meat is produced at four factories: Myronivska Poultry Factory, Druzhba Narodov Nova, Orel Leader, and Vinnitsa Poultry Factory. By 2020, the company plans to produce 900 thousand tons per year. The most famous brands are &#8220;Nasha Ryaba&#8221;, &#8220;Bashchynsky&#8221;, &#8220;Druzhba Narodiv&#8221;.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aaa160b120.jpg\" alt=\"Mironovsky Hliboproduct (&quot;MHP&quot;)\" title=\"Mironovsky Hliboproduct (&quot;MHP&quot;)\"\/><\/figure>\n\n<p class=\"wp-block-paragraph\">The second place is occupied by <strong>Agromars,<\/strong> which produces the brand &#8220;Gavrilivs&#8217;ki kurchata&#8221;. The company consists of 2 feed mills, 12 farms, 3 hatcheries, 43 broiler farms, and 3 slaughterhouses. &#8220;Agromars&#8221; trades with Germany, Iraq, Holland, Belarus, Ireland. In 2015, the company launched a modernized poultry farm in Kharkiv. Market share is just over 9%.<\/p>\n\n<p class=\"wp-block-paragraph\"><strong>&#8220;Agro-Oven<\/strong> has a 4.6% market share. Unlike the first two companies, this holding produces not only chicken, but also pork and beef. There are 3 complexes in the group of companies: &#8220;Golubovsky&#8221;, &#8220;Maryanovsky&#8221;, &#8220;Molodezhny&#8221;. They have their own hatchery, 2 meat processing plants, a potato processing plant, and 2 feed mills.<\/p>\n\n<p class=\"wp-block-paragraph\"><strong>&#8220;APK-Invest&#8221;<\/strong> is the leader in pork production in Ukraine &#8211; every 15th kilogram of pork comes out of its factories. The total market share is 4.5%. The total number of pigs is 250 thousand-plus heads, the most famous brands are M&#8217;yasna Vesna, Stavros, M&#8217;clear.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aaa3b33d7b.jpg\" alt=\"&quot;Gavrilivsky Kurchatas.&quot;\" title=\"&quot;Gavrilivsky Kurchatas.&quot;\"\/><\/figure>\n\n<p class=\"wp-block-paragraph\"><strong>Dneprovskaya Group<\/strong> is in fifth place and holds 4% of the market. The complex, located in Nikopol, supplies up to 7% of the country&#8217;s chicken. Famous brands: &#8220;Dniprovskiy kurchata&#8221;, &#8220;Znatna kurka&#8221;. The complex operates a feed mill, 125 poultry houses and hatcheries.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-&#x43F;&#x440;&#x43E;&#x433;&#x43D;&#x43E;&#x437;-&#x440;&#x430;&#x437;&#x432;&#x438;&#x442;&#x438;&#x44F;-&#x440;&#x44B;&#x43D;&#x43A;&#x430;-&#x43D;&#x430;-2018-&#x433;&#x43E;&#x434;\">Market forecast for 2018<\/h3>\n\n<p class=\"wp-block-paragraph\">The Cabinet of Ministers in February 2018 signed programs for state support of agro-culture. The amount of subsidies will amount to more than UAH 6 billion. Most of the money will be spent on livestock development. Of these, UAH 2.5 bln will be spent on the construction of factories and farms. Financing is provided in the form of loans for 5 years, or with compensation of 30% of the built capacity.<\/p>\n\n<p class=\"wp-block-paragraph\">Subsidies for dairy cows for legal entities are equal to UAH 1,500 per animal, and for private individuals &#8211; UAH 2,500. It will also sponsor the production of Ukrainian agricultural machinery.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aaa706f6cb.jpg\" alt=\"Market forecast for 2018\" title=\"Market forecast for 2018\"\/><\/figure>\n\n<p class=\"wp-block-paragraph\">Ukraine is forecast to become a key player in the EU poultry meat market in 2018. This is possible due to the low price of chicken fillet and good quality products. Already in January 2018, Ukrainian exports grew 1.8 times compared to January 2017.<\/p>\n\n<p class=\"wp-block-paragraph\">The pork situation continues to be tense. Already in January 2018, 27 outbreaks of ASF &#8211; African swine fever &#8211; have been recorded in the country. In 2017, 163 cases were counted. ASF caused losses of more than 1 billion UAH. That&#8217;s why pork will cost even more in 2018.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aaa99bd82b.jpg\" alt=\"Market forecast for 2018\" title=\"Market forecast for 2018\"\/><\/figure>\n\n<h2 class=\"wp-block-heading\" id=\"h-&#x430;&#x43D;&#x430;&#x43B;&#x438;&#x437;-&#x440;&#x44B;&#x43D;&#x43A;&#x430;-&#x43C;&#x44F;&#x441;&#x43E;-&#x43A;&#x43E;&#x43B;&#x431;&#x430;&#x441;&#x43D;&#x44B;&#x445;-&#x438;&#x437;&#x434;&#x435;&#x43B;&#x438;&#x439;\"><strong>Analysis of the meat and sausage products market<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">The market continues to slow down, as do other industries. This happens for the following reasons:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>increase in production costs due to higher raw material prices;<\/li>\n\n\n\n<li>temporary closure of some meat processing plants due to high prices for raw materials;<\/li>\n\n\n\n<li>care of enterprises located in eastern Ukraine and Crimea;<\/li>\n\n\n\n<li>decline in purchasing power as the hryvnia depreciates;<\/li>\n\n\n\n<li>going into the shadows.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">&#8220;Shadow&#8221; accounts for about 30% of the market and includes small businesses in the west of the country that trade in markets without reporting to the fiscal service.<\/p>\n\n<p class=\"wp-block-paragraph\">However, total sausage products increased slightly in 2017 compared to 2016, driven by the production of smoked and semi-smoked products, as well as horsemeat products. Produced 150.66 thousand tons more in 2017 than in 2016. Overall production growth was 2% &#8211; here we can say that output is stabilizing rather than growing.<\/p>\n\n<p class=\"wp-block-paragraph\"><strong>Read also: <\/strong><a href=\"https:\/\/koloro.ua\/blog\/issledovaniya\/kolbasnyj-rynok-ukrainy.html\" target=\"_blank\" rel=\"noreferrer noopener\">\n  <strong>&#8220;Ukraine&#8217;s sausage market in 2016&#8221;<\/strong>\n<\/a><\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/koloro.ua\/public\/files\/images\/content\/5a8aaac19f097.png\" alt=\"Analysis of the meat and sausage products market\" title=\"Analysis of the meat and sausage products market\"\/><\/figure>\n\n<p class=\"wp-block-paragraph\">Part of the growth in production of expensive semi-smoked sausages and other delicacies is due to the fact that enterprises are switching to the premium segment. Because of rising prices, citizens are buying less meat, even relatively cheap chicken. Therefore, manufacturers rely on high-income consumers who are not ready to give up expensive quality products.<\/p>\n\n<p class=\"wp-block-paragraph\">&#8220;Globinsky Meat Processing Plant remains the largest producer. In 2017, according to the report, the company generated and sold:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>sausages and sausage products &#8211; 26,025 tons;<\/li>\n\n\n\n<li>chilled pork &#8211; 6918 tons;<\/li>\n\n\n\n<li>semi-finished products &#8211; 2,704 tons;<\/li>\n\n\n\n<li>other &#8211; 1,669 tons.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">If we look at production in chronological terms, 2016 is currently the period of the lowest production volumes in the whole of Ukraine. In 2017, there was a noticeable increase, from 212,255 thousand tons to 242,010 thousand tons, an increase of 14%.<\/p>\n\n<p class=\"wp-block-paragraph\">Most sausages are produced in Dnipropetrovsk, Donetsk, Poltava, Kharkiv and Zaporizhzhya regions. The most intensive sales are in the summer, and in the fall and winter the rate of product sales decreases.
